Have you heard of the latest trend in coffee? It has a few names that it goes by – whipped coffee is probably the most common. But it is also called TikTok coffee because videos of people making and enjoying their whipped coffees are a current trend while people are staying home during the COVID-19 outbreak. The recipe is originally from South Korea where it is known as dalgona coffee because it resembles a Korean honeycomb candy.
The recipe is simple:
2T Instant Coffee
2T Sugar
2T Hot Water
Mix with a hand mixer or whisk until creamy and foamy.
Serve over iced milk.
However, I noticed that the original recipe is very high in carbs – most recipes have at least 1 tablespoon of sugar and are served over milk. That means there are at least 25g of carbohydrates in each cup of the wonderful whipped coffee!
I wanted to make a low carbohydrate version. Call it my low carb or keto coffee! I turned to no carb sweeteners and my unsweetened almond milk. But I quickly found that when you substitute the sweetener – whether I used aspartame, sucralose, saccharine, or stevia – the whipped coffee would not hold its structure. After a few minutes the foam broke down and you can literally pour the now unwhipped coffee out.
Having access to the best dysphagia thickener in the world, one that I’ve noted is the gold standard for thickeners, I went to work on creating a more stable version. It took a little work, but I came up with a great version. I think it turned out to be the secret ingredient to making the best low carb / keto / whipped / dalgona coffee! So here is my recipe:
John's Best Low Carb / Keto / Whipped (dalgona) Coffee Recipe
2T Instant Coffee
2T Hot Water
3 pkts no carb sweetener (roughly the sweetness of 2T sugar)
1-(6g) packet of SimplyThick® EasyMix™ Instant Thickener (or 1 pump stroke from a bottle of SimplyThick Easy Mix)
Combine the ingredients.
Mix with an electric hand mixer for 2-3 minutes.
Serve over iced unsweetened nut milk of your choice.

I’ve tried the recipe with the blue packets (aspartame), the yellow packets (sucralose), the pink packets (saccharine) and stevia packets with equal success. So depending on your tastes, you can use any of the sweeteners or combine them. Let me know what you think!
